Throughout the Spanish cider regions Sidra is served by raising the bottle over your head and pouring into the glass held at your waist. The pourer looks blankly forward, not at the bottle or at the glass. It is poured this way to allow air bubbles into the drink, and generally a few drops are spilt on the floor in the process.
